Artificial intelligence can structure information with extraordinary precision. It can also generate authority it does not possess.
Artificial intelligence is exceptionally good at making information sound authoritative. This is precisely the problem.
When AI generates a product summary — describing what a food product contains, how it was produced, what its nutritional attributes are — the output reads with confidence. Grammatically smooth, structurally coherent, appropriately detailed. The reader encounters it as a statement of fact.
But the authority of the summary depends entirely on the authority of the source. If the AI is summarizing a producer’s own declarations, the summary represents what the producer said — nothing more. If the presentation obscures this distinction, the reader may mistake a declaration for a verdict. A producer’s claim becomes, in the reader’s mind, a system-endorsed fact.
This is the quiet problem. Not that AI makes errors — though it can. But that AI outputs, by their nature, look like conclusions. And in food systems, where health is at stake, the difference between “the producer declared this” and “this is true” is a difference that carries real consequences.
The responsible use of AI in food documentation requires explicit constraints. The AI extracts only from declared fields — it does not infer. It uses associative language (“associated with”), never causal language (“causes” or “improves”). It does not make health claims. Its prompts are versioned, timestamped, and auditable. Audio summaries are informational, not advisory.
These constraints reduce the usefulness of AI in marketing terms. They increase its usefulness in governance terms. An AI that clearly represents what a producer declared, without adding the appearance of independent validation, is an AI that institutions can trust — precisely because it does not pretend to know more than it does.
Restraint is not a limitation of the technology. It is the condition for its legitimate use.
